Pinsa Romana is in fact a traditional Roman dish. From the outside, for those who don't know it, it may look like a round, fragrant focaccia. Instead, it has its own recipe: a mix of certified flours containing soy flour, wheat flour and rice flour; produced in the total absence of preservatives. The dough is light (leavened 72 hours), fragrant and highly digestible. It contains more water than a normal pizza and remains fragrant even when cooked in the oven at home.
