Slow food presidia are communities that work every day to save native breeds, vegetable and fruit varieties, baked goods, cheeses, cured meats and traditional sweets from extinction. They are committed to passing on production techniques, cultivation or crafts that would otherwise be lost. They care for the environment, taking care of every aspect of slow food.

Apricot jam from Scillato, directly from Sicily.

Scillato Apricot: This is an early variety of apricot with a small, often red-faceted fruit, very fragrant and with an intense flavour. Harvesting begins at the end of May and usually lasts two or three weeks. Cultivation is traditional: the trees are pruned each year, no chemical treatments are carried out - neither for the soil nor for the fruit - and the fruit is harvested by hand, in stages. The trees are large and over 30 to 40 years old.

Jam and pate of Castrofilippo onion, a variety with ancient origins.

The Paglina onion is a very special variety grown in the province of Agrigento. Its main characteristics are its sweetish flavour and its shape and weight. Cipolla Paglina bulbs range from 500 g to 2 kg. It has always been grown by hand and harvested by hand, and it is interesting to note that it is a typical local product that was already listed in the Bourbon land register in 1844.

Late Ciaculli mandarin marmalade, the 'marzuddu'.

Mandarino Tardivo di Ciaculli is produced by farmers working in the Parco Agricolo di Palermo, which is the remaining part of the original agricultural area known as the Conca d'Oro di Palermo. It is grown in the special and unique peri-urban area of the city of Palermo, and is called 'marzuddu' because of its ripening period, which lasts until March.

Strawberry jam from Sciacca and Ribera, a fruit rich in history.

In Sicily, the wild strawberry grows wild in the scrubland of the Madonie massif, the Nebrodi mountains and Etna, but there are also cultivations in the valley areas of Ribera and Sciacca, where fruits with a curious history are produced. It seems that the small strawberries still grown in this area of the province of Agrigento derive from seedlings brought back to Sicily by veterans returning from the Great War. The Ribera strawberry is aromatic and very fragrant, with its small, globular, deep red fruit, and has a relatively short harvesting season. Fruit ripening begins in early April and continues until the end of May, with a few productive spikes in the first weeks of June.

Rarely has an area had such a strong link with a product as that which unites the Alto Vastese with ventricina. In the past, black or red pigs were used to prepare it, while today the most common and widespread white breeds in the area are purchased. Once the noblest cuts of meat have been chosen, they are salted and spiced using only 'Corno di Capra' peppers from the Vastese area, then the ventricina is tied by hand with string and hung up to dry in a room with a lit fireplace for at least seven or eight days. After drying, the ventricina ages in a ventilated and cool environment for about three months. In the area of origin, cut into large chunks, it is also an ingredient in the meat sauce, but it is usually eaten raw, roughly sliced with a knife.
